This is my Mom's favorite soup recipe. She would make for my brothers and I every time there was a snow storm. It's such a comforting soup and I want everyone to try how great it is!

Ingredients
3 tbsp butter (melted)
1 onion (chopped)
3 tbsp flour
1-1/2 cups milk
1-1/4 cups chicken stock
1 cup + 3 tbsp chopped broccoli
2/3 cup + 2 tsp matchstick-cut carrots
3/4 stalks of celery (thinly sliced)
1-3/4 cups + 3 tbsp shredded cheddar cheese
salt, black pepper, other spices to taste
Directions
Over medium high-heat, melt the butter in a pan. Saute the onions in the butter until translucent. Set aside.
In a large saucepan, whisk1/4 cup melted butter and flour together in a over medium-low heat until flour loses its texture. Add 2 tablespoons of milk to keep the flour from burning.
Gradually pour milk into teh flour mixture and keep whisking. Add in chicken stock.
Bring to a simmer and cook until the mixture is thickened. This should take 20 minutes.
Add broccoli, carrots, sauteed onion, and celery. Simmer until vegetables are tender.
Stir in your cheddar cheese and mix until the cheese melts. Season and pour into a bowl. Garnish with steamed broccoli and green onions (if preffered).
Serve While Hot With Baguettes!
