Everyone deserves a good breakfast for the morning of Christmas! Pancakes are a staple, these are more festive! This recipe makes you the fluffiest pancakes with yummy decorative toppings. Make them with the kids!
Decorative Christmas Pancakes
Pancakes that are made to perfection. Topped with strawberries, blueberries, nuts and whipped cream!
1 cup and 2 tbsp milk
3 tbsp white vinegar
1-1/2 cups flour
3 tbsp brown sugar
1 1/2 tsp baking powder
3/4 tsp baking soda
3/4 tsp salt
2 large egg
3 tbsp butter (melted)
1 cup strawberries
1 cup blueberries
1/2 cup crushed nuts (pistachio and almonds)
In a bowl, combine the milk with vinegar to make a “buttermilk”. Set this aside for 5 minutes.
In a separate bowl, mix flour, baking powder, baking soda, brown sugar, and salt.
Beat the large egg into the “buttermilk” (milk and vinegar) and add in your melted butter. Mix.
Add in the dry ingredients to the wet ingredients slowly and whisk until fully combined with no lumps.
Heat a pan on medium heat and coating with a cooking spray or butter. Pour in a cupful of batter to make a pancake. When bubbles appear on the surface, it is ready to flip.
Repeat pouring and flipping, making sure both side are golden brown.
When you're ready to plate, top each stack of pancakes with a whipped cream, strawberries, blueberries, and crushed pistachios, almonds, and real maple syrup.
Heat a large skillet over medium heat, and coat with cooking spray. Pour 1/4 cupfuls of batter onto the skillet, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.
