Macarons are such a delicate treat that you can serve to anyone with a side of tea. The crunchy but soft shells with flavorful buttercream will leave everyone wanting more. They're sweet but not overly sweet - so I must warn you not eat the whole patch!
Poppin' Peppermint Macarons
Sweet and minty! You can't go wrong making these. Follow this recipe to make easy macarons for this Christmas Season.
1 cup almond flour
1 1/2 cups powdered sugar
3 egg whites, room temperature
1/4 tsp cream of tartar
1/4 cup sugar
food coloring (if preferred)
1/2 cup butter, softened
2 cups powdered sugar
1/2 tsp peppermint extract
1/2 tsp vanilla extract
2-3 tbsp cream
4 candy canes, crushed (optional)
In a large bowl, combine almond flour and powdered sugar. Sift the mixture 3-4 times.
Separate egg whites from 3 eggs and let them sit at room temperature for 2 + hours.
In a large bowl, beat the egg whites on high speed until they become frothy. Add cream of tartar and continue to beat until the egg whites begin thicken.
Add the sugar and continue to beat until stiff peaks form.
Add the sifted almond flour and powdered sugar to the egg whites. Mix it in three parts making sure it is combined well each time. Use a folding motion and try not to over mix. Mix in red coloring to make the macarons bright red.
Put the mix into a pastry bag or large ziploc bag and snip off the tip.
Pipe circles (about 1-inch) on parchment paper lined baking sheet using a swirl motion. Tap the baking sheet a few times to remove air bubbles.
Let the macarons sit after being piped for 30-45 minutes.
After resting, put the macarons in the over for 15-18 minutes. Cool them completely before taking them off the parchement paper.
Beat butter with a mixer until it turns pale and smooth. This should take 3 minutes. Add powdered sugar in 1/2 a cup at a time. Mix well each time.
Add vanilla, peppermint extract, and cream. Mix until spreadble and thick.
Pipe the frosting onto on of the macaron shells and top with the other shell.
Roll each filled macaron in the crushed candy canes if wanted.
